by bosssanders on December 30, 2011 with 35 comments

Our family has been trying lots of new recipes lately.  Our goal is to compile 50 “favorite” main dish go-to recipes to make a “menu” of sorts which will make meal planning THAT much easier!  Just pick and fix!

Here’s another of our favorites:

Easy Crockpot Italian Chicken:

4 chicken breasts, 1 packet Zesty Italian dressing seasoning, 1 8 oz. cream cheese (softened), 2 cans cream of chicken soup; Cook on low for 4 hours. (If sauce is to!o thick, add a little milk.) Serve over pasta.

What are some of your favorite “go-to” recipes?  I’d love to hear!

This looks delish! Will be making this week :)

  • Melanie

This looks great, but I normally have to leave my crockpot to go to work, can it stay in longer than 4 hours, or do you think it would dry out?

  • Julie

Is the chicken diced and cooked first? Looks good.

  • Ashley

    In response to your questions:

Yes, you can definitely leave it on longer than 4 hrs, just add more soup and milk.

We didn’t cook the chicken beforehand and cutting it up depends on your tastes. Shred it, chunk it, chop it … Whatever you like!

  • Kelly

I wonder how it cooks together with no liquid? Is it bonless skinless chicken?

  • Ashley

We used boneless skinless. If you try no liquid, please come back and let me know how it turns out!

  • Hannah

Can you half the recipe? Smaller family and I don’t think we’d eat the whole 4 chicken breasts??? Looks/sounds YUMMMM!!! Thanks for sharing!

  • Ashley

I’m sure you can half the recipe… Or just use less chicken/smaller pieces. And there’s always leftovers!

  • Julie

mmmm!! So happy to find this! I really need some new & yummy crock pot recipes. I just don’t have very many so I don’t use the crock pot as often as I’d like to. One of my go-to recipes is called Sausage Skillet. It’s awesome!! SO quick & our family of 5 (with 3 little boys) gobbles up every bit of it. It’s on my blog if you want to check it out. It has green beans, potatoes, onions, garlic salt & sausage in it. The potatoes are microwaved so the whole meal cooks up pretty fast.
Thanks for all you share :) Happy to find you!!!

Anyone try this with low fat or fat free cream cheese?

  • Kelly

I made this tonight! So good! I used reduced fat cream cheese and whole wheat pasta. I also threw in about a cup of frozen spinach about 30 minutes prior to it being done. Very tasty! My 18 month old loves it! Thanks!

  • Yolanda

I made it tonight too with whole wheat rotini. It was divine. Can’t wait to try it again with some different ideas like the spinach.

I put mine in the crockpot on my lunch break and it was just about ready when I got home. The chicken shreds pretty easily if you cook it whole. I used boneless thighs. I was worried about the liquid too, so I added a little bit of water but it still came out fine. Be sure to use the Reynolds bags in your crock pot for easy clean up.

Your’s is a point of view where real itneillgnece shines through.

Made this yesterday for a large family lunch (I tripled the recipe) and it was wonderful! It worked out perfectly, put it in the crock-pot around 8 and by the time we got home from church it was ready. The only thing I might do differently next time is to cube the cream cheese before adding, even after 4.5 hours it was still pretty chunky, although some people said they preferred it that way. Either way everyone said they loved it!

Do you add water to the soup like the can says?

  • Ashley

We didn’t add water but just a bit of milk. It was great!

I stumbled upon this recipe via a Pinterest Pin today. Since the number of ingredients was so small and I had everything on hand (with minor substitutions), I decided to give it a try on my picky family. It was an instant HIT! It is now, one of my go-to recipes. Thank you so much for sharing.
BTW, my substitutions were: regular italian dressing mix instead of zesty, one can of cream of chicken and one can of cream of chicken with herbs and the chicken breasts I used were the frozen bag variety. I cooked on high instead of low because of the frozen chicken and it was great! I took the chicken out 1/2 hour before serving and pulled it apart with a fork then put it back in.
The possibilities are endless for variations too.
    Love it!

This would be great with some bacon chopped up in it. Cant wait to make it! :)

What size cans of cream of chicken

  • bosssanders

    The “standard” size

  • Savannah

Great ‘basic’ recipe that can be tweaked around to work with what’s in the fridge! Along with the pasta and chicken, I used reduced fat cream cheese, skipped the dressing, used 1 can cream of chicken, 1 can cream of mushroom, added approx. 1 cup of sliced mushrooms, and then one hour before ready I added frozen spinach. Kudos!

  • Savannah

ps- has anyone tried increasing the liquid then adding the noodles directly to the crockpot? I am a horror at when it comes to ‘those’ kind of changes in a recipe, could this even be done? It would sure save me some clean up!

  • Lori

I’m a terribly inexperienced cool, afraid of salmonella, so can someone please assure me that 4 hours on low is enough to cook the chicken?! It’s in the crockpot now, so I’ll find out soon enough, but I’d love some assurance. :-)

  • Shelley

Lori, my mother worried about the same thing when I told her it only had to cook 4 hours! Mine probably cooked for about 4.5 and it was perfect! I think 4 would’ve been plenty of time as well, but the preacher ran a little long that Sunday so the chicken got 30 extra minutes :)

  • Allison

I made this tonight and added two cans of mushrooms. They provided enough moisture that I didn’t have to add any milk. My husband and I both liked it and can’t wait to try it with more veggies. Maybe broccoli?

This looks delicious! I’m going to have to try this over the weekend! Thanks for sharing! :)

  • Jenn

I made this tonight and it was delicious. The sauce was not too thick at all. I chopped the chicken after cooking, but I think I’ll shred it next time. I used Good Seasonings Italian Dressing mix and the flavor was great. This went really well with whole wheat penne. :-)

  • Bridget

I made this and used low fat cream cheese. Next time I’m gonna substitute cream of celery soup for one of the cans of cream of chicken soup and maybe more Italian seasoning.

  • Jenn

I am going to make this for dinner tonight. Do you think it’d be better over egg noodles or rotini pasta?

  • Coco

Does anybody have any suggestions of what I could replace the cream cheese with? This looks SO GOOD!! But my husband doesn’t like cream cheese :( I’d love to be able to make it for him!

  • Sarah

My crockpot sparked and died when I plugged it in (so bummed!) so I transferred ingredients to a 9×13 baking dish and covered w/ tin foil. (Only addition I made was a package of frozen broccoli mixed in). Baked for 75 mins at 325. Served over tri-color rotini. Yummy!

I have a few standby recipes that I love. One of my favs is one I grew up having, it’s what my family calls Cowboy goulash and if done right it is so yummy. I have never been one to cook by measurement unless I am following a recipe and even then my measurement is ify but I for a family of 6 I (but three of the are toddlers of course they do normally eat three helpings of this dish so even for an older kid you should be okay) I usually use 1 to 2pounds of hamburger I brown the hamburger and then drain the grease I use domente canned tomatoes usually two cans of the basil garlic and add that to the meat to simmer then I boil noodles (it doesn’t really matter what kind) but it is best with elbow macaroni I drain the noodles and add the meat and tomatoes (you can also add a can of tomato sauce if you prefer it with extra sauce on the noodles) I then season it with pepper and a garlic herb seasoning to flavor I ussually have corn as a side because my hubby doesn’t like it in the goulash you can also add it to the goulash though drain it first. I have also done this recipe with cut up hot dogs, ground chicken, cut up chicken breast, and ground turkey and all of them were yummy…also tasty is to cook it then put it in a casserole dish top with cheese and bake for about 10minutes on 375 degrees :) This is my families favorite meal, I never get turned down when I ask if they want this even my nieces and nephews and sisters and mom love when I make it and they grew up eating it :) guaranteed home run promise ENJOY
