Pineapple Cake – Oh-So-Delicious

This is one of my favorite summer-y cakes.  There is just something cool and refreshing about a cool pineapple cake…Yummm.

You will need:

1 Box Duncan Hines Butter Cake Mix + ingredients it calls for on back of box.  (Of course, you can make it from scratch, but… if you don’t tell anyone it’s a box cake, I won’t!!  Also, it doesn’t have to be Duncan Hines…any butter cake mix.)


1 lb Powdered Sugar

1 large can crushed pineapple in juice

8 oz sour cream


Cool Whip (or you can make your own whipping cream)


Cook cake as directed in two buttered and floured 9″ pans
While baking, mix the powdered sugar, pineapple, and sour cream in a bowl.  Once cakes cool and have been carefully removed from the pans, put “filling’ on top of one of the cakes and then put the 2nd cake on top.
“Ice” both cakes with cool whip.
Try not to eat it all in one sitting.
1 8 oz. sour cream

Cool Whip on top and sides

    For dumb blondes (even boxed blondes) like me, you should explain that I should drain the pineapple. Headed back out for more pineapple, hope iy is yummy in the end!

    Wait! Stop! Don’t drain it! LOL It’s supposed to be uber liquidy because as it sets, it will go into the cake and be part of the awesomeness. Unless, of course, you don’t like super moist cake that is AWESOME…then, drain away ;) Then, you “ice” it with cool whip at the end. You leave it in the fridge, by the way…it’s sooooo good.

    Ok, I got your message on my phone and turned around. Luckily, I was lazy and had not thrown it out yet. Finally, my procrastination pays off! I went home and added my own bit of awesomeness. I cut the top off the cake so it would sit even, which gave it more texture to soak up the filling. Then in a stroke of genius, I decided to cut the top half even, let it soak up some filling and then replace the piece I cut off. Do you follow? Then iced the whole thing. I originally thought the filling was supposed to be more of an in between the layers kinda thing. Sorry for the confusion!
