Eat it…and like it…
I’ve gone back to menu planning (now that I’m feeling better) and am once again on the lookout for really inexpensive yet healthy dinners. And, most of what WASN’T healthy, can be made that way by using whole wheat flour/noodles, brown rice, organic or fresh produce, lean meats, etc.
This week, we spent 124.75, and here’s the menu for the next TWO weeks (we had some ingredients…like a bag of beans and a couple of other random things):
1. Pepperoni and cheese Calzones
2. Pasta and beef soup and Giant Pretzels
3. Pasta and tater tot casserole (using previous night leftovers)
4. Chicken and Rice
5. Broccoli and Cheese Soup and Giant Pretzels
6. Chicken Pot Pie
7. Chicken Nuggets and Baked Potatoes
8. Sloppy Joes
9. 5 Bean Soup
10. Jambalaya
11. Tacos and tater tots (if there are leftover tots)
12. Chili
13. Chili dogs
Just In Case Meals (Meals we can make from the pantry):
-Another Bean Soup
-Chicken Nuggets and Macaroni and cheese
-Chicken Spaghetti or Spaghetti without meat
-Pasta with vegetables and a light tomato sauce
Lunches will be leftovers from the nights before or pizza rolls/turkey sandwiches (for L, if she won’t eat what we had the night before). Plus veggies and fruits for snacks. Or…peanut butter sandwiches
I’m not really sure what the serving sizes are on some of these meals, so some will last longer than others.
So, what are you guys cooking up this week? Have any good recipes that are pretty inexpensive to make? I’m wondering if next time I can shave some off of that total… (Suggestions welcome)

Hey you did good. I spent $88 at Wal-Mart then another $88 at Krogers. And I saved $35+ at Krogers with coupons and the kroger card. The only thing I should have to get in the next two+ weeks is bread, juice and milk. (I hope) But my stuff is not all quick. Here is my list(in no particular order) -
1. Gumbo
2. Pork Chops w/Potatoes & broccoli
3. Taco Back
4. Chicken Wraps
5. Fried Chicken w/Potatoes & Black-eyed peas
6. Rd Steak and Gravy w/Potatoes & Corn
7. Meatloaf w/Potatoes & Fried Okra
8. Chili Dogs w/Macaroni & Cheese
9. Jambalaya
10. Potato Stogoanoff Hamburger Helper w/Corn
11. Meat Balls and gravy w/Potatoes & Black-eyed peas
12. Dirty Rice
13. Smothered Burritos/Chimichangas
14. Spaghetti
15. Chicken noodles w/Mexican cornbread (actually had this one tonight)
16. Beefstew w/biscuits
17. Chicken Creole
I actually have enough to do several of these more than once. Then I got some oranges to snack on. Our cupboards were bare and I can now say they are full. But no junk! Due to my work hours and all the extra stuff, I tend to lean towards box meals and just add stuff.

I can barely think a day in advance! I wish I was good at this…I’ve really tried.
Now let’s get to the real problem, which is where am I going to get a giant pretzel now that I’m craving one?

Scrambled Eggs (or whatever your preference) and Banana pancakes?
I love banana nut muffins. Mmm. Yummy snack.
We love mac-n-cheese with ham chopped up in it.
Chicken breast, scalloped potatos, cream style corn.
Ricotti with Asparagus and Spinach. (I never thought I would like this, and while I still won’t eat more than a bite or two of Asparagus, I love the rest.)
Egg Sandwich (on wheat toast, or bagels) with some fruit.
Oatmeal with fruit mixed in… mmm.
Can you tell I’ve been in the mood for more “breakfast” food? ha.
Tonight was my once a month splurge on breakfast for dinner: Sausage, Bacon, Scrambled Eggs, Peppered Gravy, and Biscuits. Horrible horrible for the arteries in excess, but darn satisfying once a month.
Corned Beef Brisket with Cabbage and Stewed potatos. If you guys tend to stretch things out pretty good, one corned beef brisket would at least make it to lunch the next day, and very possibly a second day.
OH, and noticed they finally have wheat tortilla chips… taco seasoning, beef, wheat tortilla chips, lettuce and some shredded cheese (and tomatos if you like them): yummy taco salad.
Chicken is usually cheapest at Storey’s if you’re looking for bargains. I go there for any chicken I cook.
Cam makes Portabello mushrooms and puts shredded cheese on them along with ground beef. I don’t think my body likes the mushrooms so I can only eat about half of one, but it’s good.

1. Buy bread so we can at least eat lunch, then worry about dinner.
