So, you think you can cook?

Well, here’s your challenge:  Reply in my comments with a great tasty meal that’s inexpensive (as in the ingredients won’t set me back a small fortune).  You can tell me the whole recipe right here, link to it, or give me the name and promise to email me later.  It all works.  And, I’ll be eternally grateful.

Truth is, I’m tired of spaghetti.  I bought 10 HUGE cans of spaghetti sauce at Krogers a while back (their 10 for $10 deal)…and each can will last for maybe 6 meals?  Split between 2 people – that’s a lot of meals.  A lot of spaghetti.  I’m down for most foods.  Unless it’s centered around onions.  I can deal with minimal onions (or just take them out), but not if it’s say – onion rings (that’s not a meal anyways).  So, give me your best shot.  Heck, I might even get a prize involved.

Contest ends…tonight.  I have to go grocery shopping, yo.  Either that, or I’ll be eating L’s applesauce for supper.

PS – I want recipes.  Don’t tell me about Sonic’s new burger or the Lean Cuisine dinner in the frozen food aisle.  Does. not. count.

    1 bottle spicy-ish BBQ sauce
    1/2 chopped onion
    garlic powder
    salt
    pepper
    liquid smoke

    Cook in crockpot all day (8 hours) on low.

    Pull out pork and pull apart. Mix w/ more bottle BBQ sauce.

    Please look at my cookbook of recipes that are not mine but that I’ve made and reviewed: my cookbook. You can filter by ingredient, inexpensive (not always the same definition as cheapo me, but it’s a start), or things like less than 5 ingredients (often cheaper), etc.

    If I know more about what you are after, I can give you some better ideas. Are you talking poverty poor like for reals? The Pinto Beans and Batter Bread on the Low Cost Emergency Menu (scroll down to them on that page and click the links – they ROCK!) are awesome and cost very, very, very little. I make them at my house sometimes on what used to be our Frugal Monday.

    The chicken salad is really good, kinda sweet. The beef recipes can be very spicy, but you can season to your own tastes.

    Also crockpot, but on the stove on medium works too:

    chicken thighs, butter chicken sauce. throw in crock pot on high for 5 hours. In the last hour, make brown rice according to package directions, using two thirds water and one-third chicken stock – add about an 1/8 a tsp of black pepper and garlic salt to water before adding rice. Cut up broccoli to small flowers and steam gently.

    In serving dish, a 1/2″ layer of rice, topped with broccoli and sliced avocado. Add on chicken (which will be melt-in-your-mouth tender) and top with extra butter sauce from crockpot.

    Even my 2 year old loves this – though sometimes we forgot the rice, completely.

    Easily I’d say the meatloaf.
    3 lbs ground beef (or ground chuck is best actually)
    bunch of celery all chopped up
    1 sleeve of Keebler Club Crackers all smashed into a fine powder
    1 egg
    delicious seasonings of your choice.

    Cook that thing in loaf form for like an hour on 350 but you know how ovens vary, so adjust as necessary.

    Chicken toes: (our favorite family dinner)

    either buy chicken breasts (@$7) and slice them longways or buy the precut, uncooked ones. Salt and pepper them and then skewer them longways. Brush with olive oil. Grill them on whatever grill you have; I did it on a Foreman for years. Meanwhile, make some mashed potatoes (@$5 for a 5 lb bag, or $2 for a box of instant) and boil corn on the cob (@$3 for 3 ears.) Cook some pop-up biscuits ($3) and when the skewers are grilled, drown them in bbq sauce ($2).

    $17 dinner. I arrange the skewers around the potatoes so they’re standing up like a teepee, which the kids think looks lethal and therefore awesome.
